What is the difference between عم and خال?

عم (ʿamm) is your father's brother — the paternal uncle. خال (khāl) is your mother's brother — the maternal uncle. Their feminine forms are عمة and خالة.

What do I call my cousin in Arabic?

There is no single word for cousin. You say ابن/ابنة العم (paternal uncle's son/daughter) or ابن/ابنة الخال (maternal uncle's son/daughter), and likewise for aunts (العمة / الخالة).
